Dreamy Chia Fruit Salad

Prep Time: 15 minutes
Chill Time: 24-48 hours
Servings: 6-8

Ingredients:

  • 1 can (15 oz) fruit cocktail in juice (not syrup)
  • 2 tsp chia seeds
  • 1 tsp ground flaxseed (optional)
  • 1/4 tsp turmeric (optional)
  • 1/2 cup Cool Whip (optional)
  • 1/3 cup sunflower seeds
  • 1/3 cup cashews or slivered almonds
  • 1/2 cup mini fruit-flavored marshmallows
  • 1 segmented tangelo or mandarin orange
  • 1 banana, chopped
  • 1 apple, chopped
  • 32-40 oz vanilla yogurt (or to desired consistency)

Instructions:

  • In a large bowl, pour the can of fruit cocktail (with juice) over chia seeds. Stir well.
  • Optional: Add flaxseed and turmeric. Mix again.
  • Cover and refrigerate overnight or up to 48 hours.
  • Once chia has absorbed liquid, add chopped fruits, marshmallows, sunflower seeds, and nuts.
  • Fold in the yogurt and Cool Whip (if using) until evenly mixed.
  • Chill a bit longer for best flavor blending, then serve cold.
